Fruity Chicken With Chili Rice And Beans

Ingredients

  • 200 g brown rice
  • 750 ml salt water
  • ½ cup sugar-free apricot jam
  • ½ cup mango juice (pure fruit juice)
  • 1 tsp. ground ginger
  • 1 tsp. ground coriander
  • a pinch red curry powder (medium)
  • 2 tbsp. canola oil
  • 750 g chicken filet (skinless), cut into 2 cm cubes
  • 2 small mangoes, cut into 2 cm cubes
  • salt and freshly ground black pepper
  • 1 tin red kidney beans, rinsed and drained
  • 1 tbsp. chili sauce

Steps

  1. Bring rice and salt water to boil and allow simmering on moderate heat until all water has been absorbed.
  2. In the meantime, mix apricot jam, mango juice, ginger, coriander and curry in a small bowl until they make a smooth sauce.
  3. Heat the oil in a large pan and brown the chicken on all sides for about 5 minutes. Then add the mango and stir-fry for 3 minutes. Season with salt and black pepper, cover and keep warm.
  4. When the rice is done, mix in the kidney beans and chili sauce.
  5. Serve chicken and rice.
