Preheat your oven to 350 degrees Fahrenheit.

Using a large mixing bowl you will add the thinly sliced zucchini, baking mix, diced onions, parsley, finely chopped garlic clove, parmesan cheese, seasoned salt, oregano, vegetable oil, eggs, salt and pepper to taste. Mix well to combine all ingredients.

Pour this mixture into the prepared baking dish and place in the preheated oven to bake for about 25 minutes or until it is golden brown in color.

Remove from heat and allow at least 10 minutes of cooling time before cutting into bars of about 2 inches.
